The Best Birthday Cake Ever

Part of marrying Erik meant that I inherited the privilege of making his birthday cake every year. It is seriously the best birthday cake ever.

Erik's Birthday Cake

Chocolate Fudge cake mix (plus water, eggs & oil to prepare)
6 oz. box of instant chocolate pudding
2 1/4 C. milk
1 C. heavy whipping cream
1 tsp. vanilla
1/3 C. powdered sugar
Hershey chocolate bar

Prepare chocolate cake mix according to package directions and bake in two round cake pans. Remove from pans and cool completely. Carefully slice each round in half horizontally.

Mix pudding with milk. Reserve about 1/2 cup of pudding. Place bottom half of one cake round on plate and top with 1/3 of pudding. Layer additional cake and pudding to make four layers.

Whip cream until stiff. Add vanilla and powdered sugar. Slowly fold in reserved 1/4 cup of pudding until well incorporated. Frost top and sides of cake.

Using a vegetable peeler, make chocolate curls and add to top of cake for garnish. Refrigerate.
