Pumpkin Waffles
2 T. baking powder
1 T. cinnamon
1 T. Sugar
½ t. nutmeg
¼ t. salt
Mix the above together in separate bowl.
4 eggs ( separate egg whites in separate bowl and beat to stiff peaks) add yellow part of egg with the rest of ingredients.
1 ½ cups milk
1 cup pumpkin
¾ cup butter
1 T. Vanilla
Mix the above in separate bowl. Then add to flour mixture. Cook in (Belgian) waffle iron.

This syrup made these even more delicious.
Carmel Syrup
1 cube butter
1 cup sugar
½ cup buttermilk
1 t. Karo Syrup
Heat on Med. Till it comes to low boil and remove from heat and Add:
1 t. baking soda
1 t. vanilla
Use a large pan because once the baking soda is added it grows in the pan. (Melanie says she always doubles the syrup recipe.)

Julie, I am just going to call you the next Rachel Ray!! Those waffles sound delightful!! The caramel syrup sounds exactly like syrup Andy makes. Only we use real french bread with it and sop up the syrup. It is sooooo yummy. Hope all is well with you.
You should know that I check your blog everyday. I miss you. It has been quite the adjustment, but we are making it! I cannot wait to try these. It will have to be back in the states though...pumpkin is well over $4 a can here for just 15 oz. We also don't have a waffle iron here!

I made these for breakfast this morning, and they were delicious! I love any pumpkin baked goods, and these did NOT disappoint. I love carmel so much I can't wait to try them again when I have more butter! I was sad to open my freezer and see I had none.
