This is a yummy recipe from a Pampered Chef Cookbook. I've adjusted it a bit to use frozen, boneless chicken breasts. I love the way this smells while it's cooking.Lemon Greek Chicken
Combine:
2 t. lemon zest
1/4 C. lemon juice
2 T. olive oil
4 cloves garlic, pressed
2-3 t. dried oregano
3/4 t. salt
1/8 t. black pepper
2 large baking potatoes, cut into wedges
1 red bell pepper, cut into 1-inch pieces
1 medium onion, cut into wedges
8 oz. whole mushrooms
4 frozen boneless, skinless chicken breast halves
Preheat oven to 400*. In a small mixing bowl combine first seven ingredients. Put potatoes, onion, mushrooms and peppers into 9x13 pan. Pour half of sauce mixture over top and mix to coat evenly. Place chicken breasts on top and pour remaining sauce on chicken. Bake 1 hour. (I like to wait and add the peppers during the last 20 minutes so they aren't quite as done.)

Hey, how funny. I'm making this tonight! I have your recipe from you a few years ago and I made it once and liked it, but haven't made it again. I think because I don't often have red peppers or red onions on hand. But I just went grocery shopping and specifically bought them to make this tonight- all before I saw your post! I'll let you know how it turns out. :)
One more thing- could you post the recipe for Pepper Steak? Do you use the same one as my mom? Somehow I don't have that- and I know I did years ago. I'm not sure where it's gone to. . . Thanks! I sure love this blog!!
