Pepper Steak
1 lb. Round Steak, cut into strips
2 T. vegetable oil
1 clove garlic, minced
1 t. salt
1 T. soy sauce
1/2 C. water
1 C. chopped onion
3 ribs of celery, sliced
2 tomatoes, cut into cubes
1 red pepper, sliced
1 T. cornstarch
1 C. water
Brown beef in oil; Add onion, garlic, soy sauce, salt and 1/2 cup of water. Cover and simmer for 45 minutes. Add celery and tomatoes and cook for 1o minutes. Stir in cornstarch, blended with water. Add pepper slices and cook until heated through. Serve over hot cooked rice.
(I've made a few adjustments from the original recipe - I use less oil (the original calls for 1/2 Cup - yikes!), and add my tomatoes earlier and my peppers later since I like my tomatoes more-cooked and my peppers less-cooked. I also usually cook about 2 pounds of meat for my family since my boys all love beef.)

I have a very similar recipe minus the celery. I haven't made it in a while. It makes me want to make it for dinner soon.
