Pass It On

I got this recipe from Tamara, who got this from Melanie, who got this from her sister... I can't take any credit for it, but it's definitely a recipe worth passing on.  It was a big hit at our house, and really not much work at all.

CHICKEN FLORENTINE


6 boneless, skinless chicken breasts
1 jar spaghetti sauce
2 cups cream
2 cups fresh spinach, julienned*
lots of grated parmesan cheese!!!!
1 box of pasta, prepared

Preheat oven to 375. Place chicken breasts in Ziploc bag and flatten them with a rolling pin. 

Place flattened chicken in a greased 9x13 baking dish. Sprinkle chicken liberally with garlic salt and pepper.

In a separate dish, combine sauce, cream and spinach. Pour the entire mixture over the chicken. Bake uncovered for about 35 minutes. When it comes out of the oven, stir the sauce around and then spread parmesan cheese over the top and let it melt. Serve over pasta.

* The original recipe calls for 1/2 package of frozen spinach, thawed and drained, but I thought the fresh spinach was really good.

hah-hah!! Love it!! It really is amazing and I can't believe how many people have already tried it and enjoyed it. It is SO easy, too! I love how we have our own variations to make it work for us!
