Taters

I've been a little slow in sharing some recipes lately... 

We love these parmesan potatoes as a side dish (also known in the family as "Aunt Virginia Potatoes", but I've simplified the original recipe). These take only a couple minutes to put together and you can adjust the baking time & temperature depending on what else you may have in the oven.  I've also put it together early in the day and save in the fridge before baking them.  They're great with ham or with BBQ chicken.

Parmesan Potatoes

1 bag of frozen shredded potatoes
1/4 C. butter
1/2 C. freshly grated parmesan  cheese
salt & pepper

Spray 9x13 pan with cooking spray and add 1/2 bag of potato shreds.  Dot with half of the butter and sprinkle with half of the cheese and a bit of salt and pepper.  Add a second layer of all ingredients.  Bake until potatoes are golden.  At 350* they take about 45 - 50 minutes, but I've baked them at 425* for less time or 325* for more time.  I never set the timer, I just throw them in with whatever meat or bread I'm cooking and keep my eye on them.  Sometimes they're a little extra crispy, which we like.

Sounds yummy and easy. This version is much simpler than most of seen. I will definitely have to try it.
