Mexican Shepherd's Pie

I got this recipe idea from Kelly who found it on Allrecipes.  It was quite yummy.  I adjusted the recipe a bit to use what I had on hand and "make it mine". (Here's the original if you want to compare.)

Mexican Shepherd's Pie

1 1/2 pounds ground beef
1 cup salsa
1 package taco seasoning
1/3 cup water
1 cup shredded Cheddar cheese
1 (15 ounce) can black beans, drained and rinsed
1 (11 ounce) can whole kernel corn, drained
2 (8.5 ounce) packages corn muffin mix, prepared

Cook and drain ground beef. Add salsa, taco seasoning and water. Bring to boil and simmer on low for 5 minutes. Transfer to 9x13 pan and top evenly with cheese. Top with black beans and corn.

Prepare the corn muffin mix according to package directions. Spread evenly over the beans and corn.

Bake 25 - 30 minutes at 400*, until cornbread is done.

Isn't it a good meal? I was pleasently surprised at how yummy it is- and how much my family also enjoyed it! Love it when that happens! I'm glad you like it too.

Julie, I feel like I'm hijacking your blog, but had to let you know the Mexican Shepherd's Pie was a big hit at our place tonight. Cesar had seconds and said it was really good and he does NOT like casseroles...anyhow, thanks for posting!

Julie (and Kelly)--This was delicious. We had it for dinner last night and I loved that there were plenty of leftovers for lunch today...and tomorrow. YUM!
