
I found a great recipe in a magazine at the pediatrician's office last month and in my attempt at making dinners more exciting, we tried Jamie Oliver's Dinner Lady Carrots on Sunday with our roast. WOW! You've gotta try these.
Tonight I'm cooking salmon for the first time. I really enjoy good seafood, but haven't cooked it very often. Erik & I went to a great dinner last month and had a dinner of salmon, couscous and spinach salad. We both loved everything and I have the recipes, so we'll see how it goes. I'll be making hamburgers for the boys.
Orange Blossom Honey Salmon
Salmon filet cut into 2" pieces
Equal parts honey and orange juice concentrate
garlic
ginger
fresh cilantro
1. Mix together and marinate all day.
2. Place salmon pieces in a foil-lined pan and coat with a little marinade
3. Bake at 350* until salmon flakes easily (15-20 minutes).
Spinach Salad with Honey Bacon Dressing
8 cups torn fresh spinach 7 slices bacon, cooked and crumbled
1 cup sliced mushrooms 1/2 cup honey
1/4 cup sliced green onions 1/2 cup vinegar
1 medium tomato chopped 1/3 cup vegetable oil
1 hard boiled egg, chopped 1 tsp yellow mustard
1/2 cup shredded parmesan cheese 1 tsp lemon juice
1. Combine first 6 ingredients with 5 pieces of the crumbled bacon in a large bowl.
2. In a small bowl whisk together the remaining ingredients.
3. Pour dressing over salad just before serving.

I did cooked carrots in the mircowave tonight with a little butter and brown sugar, but these dinner lady carrots sound divine!! Thanks for the good recipe. I'll try the salad, too, but will have to pass on the salmon. I keep trying it just in case my taste buds change, but alas, no. Hopefully someday. . .
I'm with Betsy...I wish I liked fish but it just hasn't happened
(unless goldfish crackers count). Thanks for all the fun new dinner ideas...I get stuck in such a rut with the same few favorites, it's good to have a few more to try.
I'm surprised you've never cooked salmon, because it's the only kind of seafood or fish I ever cook. We eat it about once a week. It's so easy, you can do anything to it, and it's hard to ruin. Catherine loves it; I hope your kids do, too!
How's the "lifestyle change" coming? This is exciting stuff, and I hope you're enjoying yourself instead of feeling constrained or something. Go!
Have you looked into Zonya Foco's cookbook? Her recipes are super healthy, containing nothing you wouldn't already have, easy, cheap and kid-friendly. Look into it, you'll love it (you can get some recipes at zonya.com, if you're interested but don't want to buy the book).

Julie--How did the Salmon turn out? I love salmon and only cook it one way and not often enough. That recipe looks simple enough for me. I'll definetly try it.
I was very happy with how the salmon turned out - (thanks for asking!) Erik & Amanda really enjoyed it, but Ashley declared it as "not my favorite". I've cooked Halibut and Mahi Mahi, but this is my first time venturing into the world of salmon. I'll definitely be looking for more recipes.

I have another recipe request- when we were at your house on our way to AZ you made that yummy pasta dish with red peppers and a creamy sauce and I don't really remember what else was in it, but I really liked it! I think you just kind of threw stuff together, without a recipe, but do you have some sort of recipe for that? I'd love it! Red peppers were on sale at my grocery store this week and I love them so I bought some. . . and now I can't find any recipes to use them in! So, if you have any others, I'd appreciate that too! I'm not brave (or experienced) enough to just throw stuff together and still have it taste good. Thanks!
We love red peppers!! I always put them in the lemon chicken pasta recipe that I got from you. Do you remember if the pasta I made you had sundried tomatoes, mushrooms and chicken? That's one of our favorites. More uses for red peppers: How about pepper steak? Viking beef? Fajitas? I just bought some yesterday. Yum!
