A Texas Treat

This yummy dip has a lot of flavor without any heat.

Corn Salsa
(recipe from Melanie D.)

1 can black eyed peas, drained
1 can white corn, drained
1/2 bunch of cilantro chopped up
4-5 green onions sliced
3-4 tomatoes, diced
2 avocados, diced
1pk of Italian dressing mix, prepared

Prepare dressing mix according to package directions and set aside.  Mix remaining ingredients in a large bowl.  Add italian dressing (I only use about 1/2 the bottle) and stir until combined.  Serve with corn chips.

(I made half of the recipe with avocados and half without for the non-avocado lovers in the house.)

I'm salivating just reading the recipe. . . .!! I've never used (or bought) black eyed peas before, but I just may have to for this recipe. Or maybe I'll substitute black beans. It sounds totally delicious!

Kelly, you'll have to try it with the black eyed peas. They're so good in this - if you like black beans, I think you'll like these. Let me know what you think : ).

I've heard this recipe referred to as "Texas Caviar." Super yummy. I've had it with black beans too.
