Fall is in the air

This smells so fabulous when it's baking - and tastes just as good when it's done.

Pumpkin Gingerbread

3 cups sugar
1 cup vegetable oil
4 eggs
2/3 cup water
1 (15 ounce) can pumpkin puree
2 teaspoons ground ginger
1 teaspoon ground allspice
1 teaspoon ground cinnamon
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 teaspoon baking powder

Preheat oven to 350*F. Lightly grease three 9x5" loaf pans.

In a large mixing, combine sugar, oil and eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, allspice and cinnamon.

In medium bowl, combine flour, soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Divide batter between prepared pans.

Bake in preheated oven until toothpick comes out clean, about 55 min. - 1 hour.

This looks so good! I will definitely be making it. I'm wondering what Fall smells like in Texas.... I'm doubting it's a cool in Sept as it is in New England!

Well, I have not seen your blog in a long time and I wish I would have thought to look on here last Saturday when I was scouring the internet looking for a good pumpkin bread recipe. It was our first day of fall-ish (well, not crazy hot) weather and Sophia and I wanted to bake. I'll have to try this recipe. The one I made was a little mushy.. too much pumpkin I think. Thanks!
