Birthday Crepes

We always do big birthday breakfasts at our house.  Jacob LOVES crepes so we made a big batch for everyone on Saturday.  

Crepes

2 eggs
1/4 C. sugar
1/4 t. salt
2 t. vanilla
1 C. milk
1 C. flour

Mix eggs and sugar together with wire whisk until light.  Add salt, vanilla and milk and mix well.  Slowly whisk in flour until well incorporated - no lumps.  The batter should be thin, about the consistency of gravy.  Heat a nonstick frying pan until very hot and then spray with cooking spray.  Holding pan in one hand, pour batter into the center of the pan.  Quickly tilt pan around to spread the batter and return to the heat. Flip crepe when the top looks dry - about 30 seconds to a minute.  Brown other side of crepe and serve warm topped with something yummy. (I usually triple this recipe for our family.)

Some of our favorite toppings are fresh berries, whipped cream, powdered sugar, jam and Nutella.

Yum, yum, yum! I hardly ever make these but might need to add them into the rotation. I loved the idea of having them for FHE treat...
