Summer Essentials

It just wouldn't be summer without these desserts in the freezer...

Mud Pie

2/3 package of Oreo cookies, blended into crumbs
1/4 C. melted butter
1/2 gallon ice cream (vanilla, cookies & cream, mint chocolate chip...)
1 jar hot fudge topping
1 small carton Cool Whip, thawed

Set aside 1/2 cup Oreo crumbs.  Mix remaining cookie crumbs with butter and press into 9x13 pan for crust.  Freeze until hard.  Let ice cream soften a bit and spread over crust.  Top with warmed hot fudge sauce and return to freezer until hard.  Spread with Cool Whip and sprinkle with remaining crumbs.  Freeze until ready to serve.


Frozen Raspberry Dessert

Crust:
1/2 C. chopped pecans
1 C. flour
1/2 C. butter
1/4 C. brown sugar

Mix together ingredients and spread on cookie sheet.  Bake at 350* for 9 - 10 minutes until lightly browned.  Cool and put about 2/3 of cookie crumbs on bottom of 9x13 pan.

Filling:
1/2 pint whipping cream
2 egg whites
1 T. lemon juice
1 C. sugar
1 t. vanilla
1 pkg. frozen raspberries (about 2 cups)

Whip cream until stiff and set aside.  Mix remaining ingredients together at high speed until stiff and shiny.  Fold in whip cream.  Pour over crust and top with remaining crumbs.  Freeze until hard.

Yuuuuummmmmmm, two of my very favorites! I'm salivating just reading the recipes. . . guess I better make me some!
