Dinner Tonight

We made some yummy panini sandwiches for dinner tonight.  There are so many variations of what you can do, but this a fast, yummy favorite.  I don't have a fancy panini press, but my grill pan works great.  We made two varieties tonight, but the options of what you can put inside are endless.  These are usually made with focaccia, but kaiser rolls are an easy option.  Erik likes the chicken and pesto panini at Jason's Deli - I'll have to try to make that one sometime.

Panini Sandwiches

Roast Beef Panini

Large Kaiser Rolls
Thin sliced deli roast beef
Sliced cheddar or provolone
Onion and red peppers, sauteed 

Pizza Panini

Large Kaiser Rolls
Pepperoni slices
Sliced provolone or mozzarella
Pizza sauce

Slice rolls and top with desired fillings.  Lightly butter rolls and place on a medium-hot grill pan.  Press each sandwich down a bit. (I put a big pan on top and give all the sandwiches a nice firm push.)  When one side is toasted flip sandwich over and grill other side until filling is hot and cheese is melted.
