Chicken, Chicken, Chicken

Yes, we eat a lot of chicken. Here are a few favorite recipes:

Chicken Pot Pie Soup

2 chicken breasts, diced
1 small/medium onion, diced
2 ribs of celery, diced
1-2 carrots, peeled and diced
2 potatoes, peeled and diced
1 C. frozen peas
1 T. butter
3 T. flour
1 1/2 C. half & half (or milk)
3 C. chicken stock
salt and pepper
1 sheet of frozen puff pastry

Melt butter in large pan and add chicken, onion, celery and carrot. When chicken is done stir in flour until combined and then add potatoes, half & half and chicken stock. Bring to low boil and then simmer until potatoes are done. Season with salt and pepper. Add frozen peas.

While soup is cooking, cut pastry into 3" squares and bake according to package directions. Serve hot soup topped with a square of pastry.


Grilled Chicken Pasta

(I tried to keep track of how much of each ingredient I added to this recipe when I made it last night - I never really measure when I make this, so I hope it's right...)
2 chicken breasts, seasoned with Italian dressing, grilled and sliced
1 package of bow tie pasta, cooked
1 C. mushrooms, sliced
1 T. butter
1 T. Olive Oil
2 cloves minced garlic
1/2 C. sliced sun dried tomatoes
fresh basil, chopped
1/2 C. frozen peas
2 C. half & half

Heat butter and oil in pan and add mushrooms and garlic. Saute' for about 3 minutes, until mushrooms are tender. Add half & half and sun dried tomatoes and cook until sauce begins to boil. Season with salt to taste (about 1/2 - 1 teaspoon). Simmer on low until sauce begins to thicken. Add pasta, basil, peas and chicken and heat through. Top with freshly grated parmesan cheese.

Black Bean Chicken Wraps

Chicken breasts
1 C. salsa
1 can corn
1 can black beans
1/2 package taco seasoning
1 can refried beans

Combine all ingredients except refried beans in crock pot and cook on low for four hours. Remove chicken, shred, and return to pot. Add refried beans. Serve in warm tortillas with cheese, lettuce, etc. I really like to put rice in my tortillas and spoon this over the rice.

I've also made this recipe by cooking the chicken first and then throwing everything in a pan on the stove for 20 minutes.
